I have an almost one year old baby, I am single, head of household, and work two jobs. My question is if I claim 0, then how will they know I have a child in order to receive the $1000 child tax refund?

What you claim on your W4 has little to do with what you claim on your return. You could claim 2 on your W4 to reduce your withholding. You could claim 5 if you felt you would not owe any tax and wanted the most take home you could get.

Agreed, I am not even a tax expert and know this one.
The W4 is merely for your company to use to know at what tax rate they will withhold money.
I am one who believes in having them hold out the very least, so I either owe a 100 or so or get a 100 or so back, and not to let them keep my money all year just to give it back to me.
Other people like to pay in large amounts to get a larger refund of their money.
As to what they know, they don't know anything till you file your taxes at the end of the year. There you tell them what you really have
