What is the best way to cook the steak so that it is not too charred on the outside in order for the inside to be medium rare?

On the grill, but it is best to braize first on both sides, this seals in the flavour and allows the meat inside to be medium rare. Years ago, when I smoked, it was the time it takes to smoke a cigarette. Alternative is to broil in the oven, with a meat thermometer. This steak will not stop cooking once you take it off, also best to cook it at room temp.

Sear it on all sides about 2 minutes each side and then pop it in the oven at about 400' with your meat thermometer until your desired temp is almost reached. Take it out and wrap in tin foil for 15 minutes and it will be perfect.

Then mix 1/2 blue cheese 1/2 butter to make a compound, put that on top and whip up some home made garlic croûtons and call me:D
