It doesn't work, unless you're sentenced to county jail. Then you stay till your release date.

In most jurisdictions. Time served is used to chip away at whatever eventual sentense you might get. Example: You are held for 30 days, you receive a 60 day sentence, you serve the balance of 30 days. However, there are generally a lot of procedural rules that must be followed to have the time count as "time served" ie: objecting to motions to continue by the prosecution and the like.

What if the person was sentenced 30 days does he have to do all the 30 days complete even if he has good behavior

Different jails have different rates of good time. But, you should get SOME.
