I roasting a turkey for tomorrow using a brine that includes a number of spices that all revolve around a cinnamon flavor (cinnamon, cardamon, mace, etc). What type of wine would compliment this well? I was thinking generally, a chilean pinot, but I t didn't sound quite right, like it would overexagerrate the flavor rather than compliment it. Any thoughts?
