Our old "over the range" vented/ microwave was hard-wired. The new one came with a plug-in cord. Do we need to add a plug to the wiring above the range or remove the plug from the microwave wiring & hard wire? Everything I read says to have dedicated outlet/wiring for the microwave. We do have a plug-in next to the range that could be used, but does it have the proper capacity to run the microwave without tripping the fuse box or over heating the outlet?

I would say, first, check to see if the hardwired connection is on it's own circuit, my guess is that it's not. Code specifies that a dishwasher and garbage disposal need a dedicated circuit. A dedicated outlet is different, meaning ONLY plug the micro into that "Plug". In the process of my remodel, there was a moment when the micro, coffeemaker, and dishwasher were all on a strip in the same plug, and was only a problem when you needed to microwave while washing dishes, and basically used one at a time. As far as whether to make it an outlet or cut you micro cord... Electrically speaking it's the same. But if you do this again, it's a good chance you will run into this again. It's very simple to attach the receptacle to the bare wires and screw it into the box with a faceplate. Just make sure you use req. precautions and turn off current to that circuit while you do it.
