I cut out squares in my countertops and I'm going to build some square boxes out of wood so that the deep fryers are secure and nail the box to the bottom of the counter so that the fryersit down in the box is this safe and won't cause a fire

Im trying to install my deep fryer in the counter of my mobile truck. I thought I would cut out some wood and make some square boxes to go around my deep fryer and cut square into the countertop where I can cook in the fryer , and nail the squares to the counter and so it can support the fryer is this an safe idea

Hi Blalcktia...
I'm thinking you will be better off purchasing/making a metal container that can set through the counter but also set on "lips" that will cover the edges of the counter cutout and support the weight of the deep fryer. See the image below for an idea of what I am talking about.
I'm also thinking that the deep fryer will need to be removable but secured very well... tough one there.
I know for sure you don't want wood... unless covered by sheetmetal... and you need to support from the top not from the bottom unless you can finish the edges of the cutout in the countertop.
You should also check with your local Board of Health regarding all kinds of safety requirements when it comes to this kind of stuff.
