You would have difficulty doing that because there are 3 or 4 large gauge wire in the "240" outlet which is most likely a 120/240 volt outlet, You are probably better off to leave the 240V line in place and run a 120V line to the range. Is there a 120V line behind the wall where the stove is located? If so, you should be able tap off that outlet and put in an old work box with a new outlet. You will be only a little power for a digital timer and light. If you have a basement or crawl space, tap off another outlet and run a new line.
