Is a contract for deed in Texas valid if it was never recorded?

I don't see any requirement that the contract be recorded.

Since a contract for deed does not convey title until the terms of the contract are completed, there is usually no need for recording. As long as the contract has been properly signed, it should be valid.

The purpose of recording would be to protect the buyer from other interests that may be created after the date of the contract. If the contract has not been recorded, those interests might have a superior claim on the property.
