Rarely eats any vegetables or fruits, but instead snacks on cookies and ice cream. He insists that he has no problems with his health, is rarely ill, and doesn’t see how his diet could cause him any health risks. He insists to WHO?? If it's the nurse, the nurse will NEVER convince him, because his insistence, is obviously in response to a conversation he's already having about it with the NURSE. He didn't buy it then, so why would he buy it now?

If it WASN'T the nurse, and the nurse has credibility, a five minute conversation covering the subject should be all it takes.

If it WAS the nurse, I'd give him some reading material, and send him on his way. If that doesn't do it, nothing will. You can't save everybody from themselves.
