I have brushed up this topic briefly, but not deep enough to write a paragraph :o

You know that soaps are sodium with an organic anion, from carboxylic acids. The 'tail' of the soap (the organic part) is hydrophobic, that is it 'dislikes' water and the head (since it is ionic) is hydrophylic, that is it 'likes' water. The tail, however is a non-polar organic solvent and thus can dissolve grease for example. Hence, those molecules in water will have their tails in grease, and the heads in water. The grease, now soluble easily comes off and is completely surrounded by the soap. Now, it looks like a bubble, with the grease trapped inside.
