I am on probation for theft. Will this show up on my fingerprints for a job?

If you've been convicted of a crime where imprints of your fingerprints were taken, yes. Are you planning on telling a potential employer that you're on probation? I would think that it would also be a requirement that your probation officer verifies your employment by contacting your employer.
If you've been in trouble with the law, it's best to be upfront with potential employers about that. If you're upfront with them, they'll think more highly of you than if they find out something about you without you telling them first.
