I used to live in UK, and always bought ham shank to make broth or pease pudding. Now I'm living in East Europe, and they only seem to sell pork knuckle. Can anyone explain the difference to me please, do these come from different parts of the leg, or is the meat treated in some way , I ask this because the ham shank is quite salty. Please... no silly answers, this is a serious question :)

Hi Neelie, yes I know pease pudding and used to use the butt portion of the leg, You can use pork knuckle. It isn't treated in any way here, and sometimes used as just a roast. I don't know what they do with it over there but as soon as you see the cut you will know if you can use it or not.
