I have an older home that is wired with 3 wire telephone line instead of four that the modular jack has. Do I just connect green red and yellow and not worry about the black line I don't have a wire for?

You want to use the red and green for your new jack, cap off the 3rd wire.
Line 1 uses red and green, line 2 uses yellow and black.
