My Father was served a Notice of Exemption In North Carolina and I was wondering if they can take anything they wanted in the house including things he didn't buy

A Notice of Exemption is actually something he needs to fill out to list property exempt from being attached to pay the debt.
And no they cannot take anything from the premises, but if it is not his property, you may have to prove that.
