How do I connect a copper tube to on\off valvue? Ihave three connector pieces. How do they go together?

If you have three pieces and you are using copper tubing then you should only need the compression sleeve (1st image) and the compression nut (2nd image). You will not need the insert (last pic.) as it only used with plastic tubing.

Here, you will slide the compression nut on first and then the compression sleeve. Insert into the shutoff and tighten the nut so it is tight but not too tight! Test the fit by turning the shutoff on and see how you did. If it leaks, turn the compression nut a little but more... ;)

You do not need teflon tape or pipe dope here.
