I filed the 8843 form with my taxes... I understand that as long as I do file this form, I can maintain my non resident status for tax purposes (beyond the 5 yr limit), is this true? Thanks!

When you file as a non-resident alien for the SIXTH year, you also need to file Form 8840 to show how you have maintained a "closer connection" to your home country.
If the IRS accepts the form as filed, then you can continue to file as a non-resident alien for as long as you are pursuing the degree under which you entered this country on your F-1 visa.
