She's quiet now and I'd really like to hear her more... is there anything I can do?

What do you mean she is quiet?

She doesn't make any noise... no moaning or screaming... but I know she has orgasms.

Is she a quiet person out of bed? Some people simply don't moan or scream, ever.

You ever ask her about it?

Have you talked to her about it?
Just FYI--if you try to make a woman think about making noise, you're going to have a LOT harder time bringing her to orgasm--it doesn't work like in porn, you know.
If she's THINKING about making noise, she's NOT just going with the moment, which is what will bring her to orgasm.

Yeah she's quiet out of bed...
And when I asked her she said "i dunno, i'm just not"
I was wondering if there was anything I could do during sex to change that

If you both get off, do you really need to change? Variety is fun, but don't fix it if it isn't broken.

I would imagine that my partner used to think the same of me... too quiet in bed, mostly because I always though the moaning and carrying on seems so fake to me.
When he started telling me how much he enjoyed hearing my pleasure (especially with a lights out session) then it opened me up more to going with the noise the feelings brought.
Also start asking her 'Do you like this?', 'Does this feel good?', these kinds of questions can also open her up to being more vocal and increasing the communication in the bedroom. Especially if you would like to be directed to what makes her tick. ;)

I don't know there is anything you can do.. you have the quiet ones, the squealers, and the screamers... People are who they are. They need to be comfortible no matter which type they are by nature. And the partner has to accept it.

Justwantfair's answer is good for that variety. Have her give you step-by-step directions, just to be different. Then you can have a turn.

Are you two the only one's in the house while this is going on? Maybe she doesn't want the kids to hear her. If so, talk to her more about it, but like Synnen said don't ruin her concentration by adding something she doesn't feel natural about. Try something new to bring it out of her. Who knows, maybe there's a scream or two in there somewhere.

I was, once upon a time, a mouse in bed. Sometimes it just takes a while for people to find their voice. It can stem from shyness or insecurity, or she could be uncomfortable letting to in the moment. I do agree with Syn though, don't get her thinking about it too much if she's naturally quiet. Pay close attention to the things she likes and doesn't seem to like as much. The more focused you are on her and getting her into it, the more you will enjoy it too, try making it all about her, try some oral pleasure if you want to find some great buttons. Don't keep doing the same thing though and expect her to be the only one to change. If you want her louder make it about her.

I've never roared... but I've been known to fart on occasion... :o

I think he would like the vocalness to come from her oral cavity, as opposed to any of the other areas, just guessing though.
