We placed a saddle valve on our water line to hook up the copper ice maker line to... however, now the pressure in the copper line is a lot less than the pressure that came out originally... we've checked the line and there is no clogs... we've pulled off the saddle valve several times to check the pressure... the pressure is fine till we put the saddle valve back on... with the current set up there is not enough water coming out to fill the ice maker correctly... what are we doing wrong?

Are you opening the Tee handle on the saddle all of the way, about 12 turns? BTW, your pressure is fine but the volume is low so it gives you the appearance of poor pressure. Plumbing terms can be a bit convoluted.

Ballengerb has good point. 1/4" line will produce very little volume - but enough to operate icemaker.

The saddle valve is piercing pipe with sharp point. It is possible that piece of copper is lodged inside the piercing point. Also, make sure you have no kink in the icemaker line. Check water flow at the fridge end of the line, before you connect it to the fridge.
