Don’t know where else to post this or find an answer somewhere so I’m going to try it here, and see if someone can give me an interpretation.

I had a dream last night with my ex(we broke-up/separated in Jan, after 7yrs together, and being engaged). In it, we’re working together, and I’m trying to get her back. But for some reason she is dating a cousin of mine. I confront her by walking in her office, and she’s there with another girl crying. Then I confront my cousin for dating my girl, and he just says, “it is what is its, don’t worry you’ll get the last laugh.” I leave the office, and my ex and she says I’m sorry I’ve moved on.

Why on earth would I dream about her dating a cousin of mine. What does this mean.

It could mean that you are subconsciously trying to come to grips with
The end of the relationship and find closure. I don't know whether you
Ever felt threatened by this particular cousin in regards to him being
A potential suitor of your fiancée or not, only you would know that.

Not every dream we have is a prediction of the truth or an indication
Of any reality. Sometimes in a dream two or more unrelated
Circumstances converge in our minds because we have been thinking
About both or all of them. Such a long-term relationship is difficult to
Get over. In your dream, she said she had moved on. You probably
Believe that she has, and may have been having a hard time doing so
Yourself. Time tends to make everything easier, and it's only been
Two months. If you think the relationship is really over with, you
Won't necessarily stop dreaming about it as soon as you might like to.

Try talking to a close friend or a counselor and staying busy.

I agree, it is about endings not being let go of and/or it could be a warning to be careful in some future event that you do not repeat history somehow.
Does your cousin represent something to you like competitive?

No, he does not. I never even see him that often. So near as I can tell he's a place holder for another man. But I find it interesting that he tells me in the dream I have the last laugh. Wishful thinking or my inner belief. Who knows
