I need to find what is ricotta cheese and a substitute for use in recepies

Either tofu or cottage cheese.
I believe ricotta is made from the whey of other cheeses.

You can make it (Cheese making recipe: ricotta (http://www.essortment.com/all/cheesemakingre_remb.htm) or Google "recipe for ricotta cheese) or use cottage cheese. If you use cottage cheese in lasagna, it tends to make it more "stringy"...

Ricotta cheese is merely the small bits of whey left over from making other cheeses (mozzarella usually). You may substitute with cottage cheese (large curd because it has more salt and flavor) you have briefly run through a food processor to obtain a smaller curd and will "stick" together similar to ricotta.
