I've booked girly holiday away in rented apartment, to find out there is no oven, just hobs!
Any ideas on what we can cook other than pasta and risotto?

I'm writing a list of recipes for the girls (as I'm the chef of the group lol) so chili is going on the list!
Not sure how spicy they'll want it though!

Stir fries are easy, and fun.

You can also use a dutch oven on the stove top... I've made pot roasts and quick breads on the stove top using the dutch.

I picked up a copy of our local free weekly paper to read on the bus coming home from work last night. They had a special on Mexican restaurants this week.

I was so hungry for my favorite quesadilla by the time I was done reading that I stopped at the store and bought the ingredients when I got off the bus. I thought of this thread and decided to post.

Note: A quesadilla is a Mexican grilled cheese sandwich; instead of bread, use two tortillas. I hope the Nopalitos are available in your area.


BoB's Favorite Quesadilla

Nopalitos (Prickly Pear Cactus leaves)
Pepper-Jack cheese
Corn or flour tortillas

1. Trim and remove needles from the cactus leaves, cut into sandwich size pieces (or 1" strips work well too)

2. Parboil cactus leaves for 5 minutes, drain.

3. Make a sandwich with two tortillas, two slices Pepper-Jack Cheese, and a cactus leaf

4. Grill in an un-greased iron skillet until the cheese melts, turning once.

Any access to an outdoor grill? That could give many more options. As for the absence of an oven, how about a cajun type boil with shrimp, potatoes, corn, sausage, crawfish, etc.. I believe you can find a recipe under the listing of "low country boil." steamed veggies over rice will compliment the meal.
