Anyone know if a hot water pipe (appx. 140 degrees) can sit directly against 3/8" drywall?

Is that safe?

Hi antipode...

Safety is not an issue here... but we never recommend that copper tubing sit against anything except hangers if possible.

The fact is that hot water pipe will expand at a pretty great rate and could make rubbing noises down the road that could disturb you at the most awful times. I would fir the wall out a 1/4" with wood lathe if possible. This way, no rubbing, no noises after all the work is completed... :)

... or install insulation on the pipe. That will isolate the contact point.
