Augergines (eggplant) cannot be frozen raw. It has to be cooked first (as in a recipe). As for lady fingers, if you mean the cookies, yes, freeze in an air tight bag.

I asumme you mean lady fingers the vegetable so what tickle said about aubergenes applies i.e. once they are cooked the recipe can be frozen. I think that applies to all "soft" vegetables but I could be wrong...

If the ladyfingers you are talking about are the vegetables (okra!) then you can freeze them uncooked, in fact they are available that way in most supermarkets! I would recommend that you clean them first , and cut them if you cook them cut in certain recipes, that way when you take them out of the freezer you won't be bothered to do so after they are defrosted! Hope that helps =)
