I was checking some new light fittings recently and was surprised to see on some of them "this unit requires an earth connection". Our house was wired in 1968 and only the Bathroom and Kitchen have an earth wire. Should all room lighting now have an earth connection?

All common configurations of installed electrical wiring are required to have a ground now. (By the way that was worded, it sounds like you may be from Britain or Canada. I can't speak to requirements there.) If you look you may find that there is a grounding wire there, it just isn't hooked to anything. Check and see. If it's there you can bring things up to date with a bit of work.
