I am trying to replace my shower dial but can't get the old one off. It is a symmons any tricks?

Hey Ryan...
First, use a pair of pliers to really grab hold of old handle and see if can rock back and forth gently... it may or may not loosen it.
Next, you could try and purchase a HANDLE PULLER (see picture)... sold at home depot and Lowe's. The screw is removed from the handle itself and the tool is inserted into handle so that the arms go behind thee handle. Then you tighten the handle puller and with any luck handle will pop off.
Finally, if that doesn't work... and it doesn't always work with the SYMMONS handles.. you may have to break the handle off by rocking handle back and forth and finally SNAPPING the end of the symmons spindle assembly. This is worst case and should only be done as last resort because it will require you to replace the entire spindle assembly as well as the handle! This will require you to shut the main water supply to the house. This method is usually reserved for times where the spindle assembly needs to be replaced anyway!
