Can I add fast acting yeast to self-raising flour

It would defeat the self rising flour part.

Actually, you can. Self-rising flour has baking soda, but that shouldn't stop the yeast from acting. Just make sure your yeast is fully active when you add it to the other ingredients. However, you should eliminate any salt called for in the recipe due to the baking soda in the flour. You might want to look at a website such as cooks.com for additional tips.
