I work in the commercial Insurance business- You will def. need general liability for the business. Limits no lower then $1million aggregate and bonding is simple. Limits in bonding typically depend on the state you live in. You got it right, you want your employees bonded. Also, if you have employees its required you carry workers compensation. Also what kind of "care" are you doing? Is this for Ambulatory or Non-Ambulatory clients?
Any experienced agent will be able to help you out. A bit of advice, you don't necessarily need to go to different agencys to get competitive quotes. When you do go to one let them know you want multiple quotes.

You will need and want several types of insurance,
Your stop will be at your full line insurnce agent,
If you have employees, you will want to have workers comp insurance on them, you will want them insured against liability, if they drive their cars to these houses they will have to provide you copies of their insurance policies on the cars showing a limit you can accept. You may want to get a bonding company to bond each of your employees.

It's also possible that providing this type of service and, depending on the type of service, may require some sort of license from a regulatory agency. So, I would recommend looking into that sort of thing also.
Depending on where you're located, you could put in the location of where you would like to be operating this kind of business into the search function at the top of the page after clicking on the following link.
Home Care Regulations - Google Search (http://www.google.com/search?hl=en&q=Home+Care+Regulations&aq=f&oq=)
