Hi,
I am new here an followed a "goggled" response to arrive at this site. I am 62 years old and a microwave queen. :(
I was recently diagnosed with type 2 diabetes and would like input on cooking for one. If you have good advice or "hints" for my circumstances, I would appreciate it, :o

Hi Joanna,
Sorry to hear about your diagnosis of Diabetes. More of us are being diagnosed with it as our society moves into this century. Being a microwave queen makes so much sense when you live alone too.
The best thing I can suggest is to cook large quantities and then freeze perfect little entrées for yourself to heat up later. You could have a lot of fun finding recipes and great sales on meat. Then you just figure out how to make each entrée the perfect balance of carbs, fats, and protein. Serve a nice low-carb vegetable with the entrée and voilà.
Get out and walk, if you can. See this as a wonderful opportunity to get healthy in every way possible. A class on managing your food intake miight help. If nothing else, you will meet other diabetics and will have plenty to talk about.

I am pre-diabetic (type 1) and watch my sugars carefully.
I love vegetable omelettes, just loaded with veggies (spinach, broccoli) and cheese, especially swiss.
In the microwave, those pre-cooked chicken/ beef strips (or meatless gluten for the vegetarians) are handy: put them in a microwave-safe container, toss some hardy veggies in roughly 1-inch pieces (like broccoli florets), a couple tbspoons of white wine, a tbspn olive oil, salt and pepper to taste, and microwave loosely covered for about 2 minutes, or until done.
I also like roasting in Corningware: same concept, different flavor. Take your veggies and protein, mix with some olive oil, toss in some sliced almonds, walnuts, whatever, salt and pepper, and either place them in a broiler or oven for 25 minutes or so (roughly how much one person might eat -- for larger portions, increase cooking time). Toss with a spoon midway through. It should be cooked and browned on the outside -- veggies should have some snap to them still -- taste-test the veggies as you go.
I love this because it is one-pot, and comes in its own pot/plate/storage container.

Steaming veggies in the microwave is a good idea.. we always do that at least once a week. Veggies taste yummier when steamed.
