My mortgage is currently in foreclosure, when I signed the mortgage the notary public was not present.  I signed the document in Little Rock Arkansas, the notary notarized it in Florida when she got the document back.  There were 2 witnesses to my signature.  Is that a valid defense?

Valid defense for what??  It is a defense to file a complaint against the notory and perhaps have their license taken away? 
 
But a foreclosure is when you are not paying for a loan,  can you prove you have been paying,  perhaps the interest rates are at a illegal level,  perhaps the loan agent lied about the terms of the loan?
