Is there anything at all I should (be aware of/look out for) throughout the divorce process?

If I contact an attorney what is the fastest they could have our uncontested divorce papers ready? Can it be as quick as a day or two? We just want to get this behind us as soon as possible.

Could they have them ready in about 30 minutes, of course
Could they have them ready in 3 days, most likely

Will there, most likely not. You can expect them to have them in 1 to 2 weeks ready to file ( then both parties will have to sign them)

Then of course you will have to follow any waiting periods and the such your state requires.

First choice is to get your soon to be ex and you to decide and know it will be uncontested, then best bet the two of you go and visit the attorney and get them started.

By all means, please use a lawyer, one who is experienced with Divorce. In some states, the lawyer will draw up Separation Papers, and there is a waiting period before the divorce can be final. In VA, it used to be, may still be, a year.
