I meant to say low pH of copper sulphate not copper in the previous thread. Will the low concentration have a large bearing on how the egg coagulates?

It is most likely due to the low pH. This will cause disruption of hydrogen and other polar bonds within the protein structure (not the peptide bonds) so it unfolds and becomes a tangled mass. The low concentration of copper sulphate will only really affect the rate of coagulation as the solution will be more dilute.
