What is the purpose of the wiring leading in and out of the fan centre. and the voltages carried by the various coloured wires.

The fan center controls your blower motor and also provides 24 volts for the low voltage controls in the system. The different color wires (motor speed and voltage) are addressed in the paperwork that comes with the fan center.
