I am a US citizen, my husband has both German and French citizenships from birth. I know that when we have children, they will acquire both US and German citizenships. My husband does not speak french well and has never lived in France. I am wondering if our children would be able to acquire French citizenship at birth as well?

That won't happen, the french laws are not like the us laws in order for you to have french citizenship you have to be like 3rd generation french citizen you can not just be born there and that automatically makes you a citizen of that country.
