There are a lot of studies on this, The amount of fat has a small effect, and there are slight differences in the number and type of bacteria, ( if the milk is kept below 40 degrees,) otherwise results make it very different.
Bacteria grows in food and breaks down to other molecules. Number one is the temperature of milk, if at the wrong temp. these molecules formed will smell. And some believe that whole milk will spoil first cause it has a higher fat content. But not all milk spoils at the same rate, just as not all milk batches are the same. Fat is supposedly not susceptible to rot whereas other compents of milk are. So I believe it really is a matter of temperature.

I know that if you buy the milk in the containers where you cannot see the milk inside, they last the longest. And if I remember right that milk is nonfat
