Hi everyone, I am looking for a recipe for rice & beans (red beans). Also what kind of rice (long grain, med grain, etc) Anyone out there have a good one.

Here's a good one;
1 - 15 oz. can beans, (or cook the bagged beans yourself, first)
1 - 8 oz. can tomato sauce
1/4 red bell pepper sliced into thin strips
1/4 cup onion, sliced into thin strips
2 tbsp. olive oil
6 tbsp. sofrito ( 3 oz) ***(see below if you want to make your own)
1/2 clove garlic, minced
1/2 cup water
1/2 tsp. salt
Dash of pepper, onion powder, garlic powder--to taste
Cooked rice
1 tbsp. cilantro for garnish

**Sofrito**
3-4 stems and leaves cilantro
2 cloves of garlic
1 medium to large green pepper
1 medium to large onion
1 medium tomato
Mix all ingredients in food processr or mixer, to purée state, when ready to use, use 2 tbsp. olive oil, put in sofrito mix and simmer on low heat, simmer at least 15 minutes, this yields enough for use and can be saved in the fridge. Gives great flavor to spanish rice, or other dishes.********************

In a deep sauce pot, simmer the peppers and onion in the oil,for 5 minutes, while stirring over medium low heat. Add the sofito, tomatoe sauce and the garlic. Simmer 5 minutes on low heat. Add the rest of the ingredients, the beans and their broth, water, salt and seasonings. Stir to mix all ingredients. Bring to boil over medium heat, then turn off heat as soon as the bean begin to boil. Cover and let sit approximately 10 minutes before serving so that all flavors mix. Serve over rice and garnish with cilantro.
