I live in northern Illinois and we pour concrete year round, leaving foundations exposed, to an extent, all winter.
As long as the footer is properly installed with drainage etc, you'll be fine.
Whoever is doing the job should be knowledgeable enough to know the ins and outs of proper winter exposer, concrete footer and wall construction isn't for the novice.

I can understand your concerns. Those folks who set those homes want the foundations backfilled as well and this is before the walls receive any weight of structure to aid in stability. Some precautions you can take include temporary bracing of poured walls from within basement until the foundation receives stability when home is in place. See to it that backfill is sandy/gravel as opposed to wet clay which might expand as it settles and freeze es against the concrete. Try not to completely back fill center of wall as you might fill completely at corners due to it's added strength from the buttressing effect of the intersecting wall. Mid wall points are most vulnerable. You do not want to create a situation where by water can run back towards a foundation wall in a pocket and freeze against the wall. A positive slope away from the foundation, tiling of footing and granular backfill matériel help eleviate this potential problem.

Tiling the footing will really help, more so if the tile leads to a sump pump that is active.
