I currently have health insurance through Sask. Blue Cross. The business where my wife works has just offered a health plan that covers employees and their spouses through Cooperators Insurance. This insurance covers everything that Blue Cross covers, i.e. dental, vision, etc. If I decide to quit my Blue Cross coverage and take the Cooperators' coverage through my wife's work will I be able to re-register with Blue Cross when my wife retires in a few years?

Do you have your BC through an employeer? If so, it would be best to ask your HR benefits coordinator to be sure, but you would possibly be able to get it again during one of their open enrollment dates.

First you need to specify where your BCBS comes from. Is it through your current employer?

I asked about the Blue Cross Health Insurance. Would lose it forever if I chose to use my wife's Cooperators insurance and drop my BC insurance? I am retired so my BC does not come through an employer. I pay for my own health insurance.

If you buy it yourself, you can just contact BCBS after you fall off your wife's and purchase another policy.
