I recently acquired a large amount of Driscoplex 6500. I understand that it is a gas line but can I also use it for 180degree low pressue boiler water.

No.
Driscoplex has a very low pressure rating (30psi) which is lower than most low pressure hydronic systems.
Also, the temperature rating of a hydronic system is in excess of the ratings specified by the manufacturers of most medium density polyethylene piping materials (MDPE.
You would do better to use a high density polyethylene product (HDPE).
