Anyone know how to make mexican cornbread or cornbread casarole? All I know about the casarole is you add cream corn and cream of mushroom I think... how much and I need the rest of the ingreiants

This is great website for recipes. People leave lots of comments and I've found them always to be helpful (you know, people saying I didn't add all the butter it made it taste better, etc). They had a bunch of them on there. I hope it helps.

This is tasty and easy to make:
1 1/2 lb boneless, skinless chicken breawst chopped
1 tbsp oil
2-3 green and red peppers, chopped
1 small can green chilies, drained
1 pkg. taco seasoning mix
3/4 c watere
1 cup shreaded cheddar or mexican style cheese
1 Pkg. (8 1/2) oz) corn muffin mix
Oven preheated to 400 degrees
Heat oil in skillet, add chicken, cook and stir till thoroughly cooked, drain. Add Green and red peppers, chilies, onions, seasoning mix and water, stir together bring to boil, reduce heat to medium low, simmer 10 minutes stirring frequently. Spoon mixture into a 9" pie plate, spinkle with cheese, prepare muffin mix according to pkg. spoon corn bread mix over cheese and completely cover cheese.
Bake 20 minutes till golden brown and let stand 5minutes before serving.
