I had some plumbing repair done and the walls of the counter under the bathroom need to be replaced. How do I fix these with the plumbing coming out of the walls?

I would suggest using drywall (sheetrock) boards. You can cut and shape these to various shapes to use around the pipes. You need a thickness of the drywall that will match your existing walls. Apply them with drywall screws of the appropriate size and length, then apply drywall tape and a patching compound for drywall.

Use a large putty knife to apply a thin coat of the paste. Wait for it to dry. Then you do a light sanding to make it smooth. If it is a large enough area, then you can use a palm sander to make it look perfect. I like to use 150 grit sandpaper for this.

When you do sand, be careful not to sand down into any drywall tape, if you have used it. Sanding right into the tape makes it rough for painting.
