I tried to cap off a water pipe with a push fitting, and everything seemed to fit well, but when the water is turned back on water sprays out from under the push fitting in several directions. What did I do wrong and how can I correct this?

If the push fitting cap is leaking it is either because the ORING inside the cap got damaged or the cap wasn't pushed on hard enough.
I will assume that the ORING got damaged because that is pretty common for non-plumbers. Here, you want to cut the pipe using a tubing cutter and then take a metal file and slightly round the edge of the cut tubing a bit. Now, make a mark on the pipe that is the proper depth for you to push the cap onto the pipe (make this mark all around the pipe) and then try pushing the cap on again...should solve the issue for you!
