I was caught shoplifting baby food worth $40 my 2 year old was with me. The police were called and the store had me sign a paper. I was then told I would get papers in the mail for a fine and a court date. Please help I want to know what's going to happen to me and my child

Depends on the judge. Varies by state, feelings of the judge. Did you need to steal the food for the baby to eat?

I live in Quebec and yes I took it so my baby could eat

You have options other then stealing to feed you or your baby, or toddler. I live in Ontario and help out at food banks so I also know.
You obviously have access to a computer so have no reason
That you cannot seek out shelters that provide sustenance.
What will happen, well that is up to you my dear to prove that you are better then stealing 'for your baby' which I don't believe for a minute.

Most likely you will get a large fine from the store to pay, and a fine to the government to pay.
You should look into a first offenders program ( assuming it is a first offence)

The reason I asked the question was that my wife and I volunteer at a food pantry in Woodstock GA. We provide food for about 110 families per week. Lots of opportunities for food instead of shoplifting. Check with local churches-St. Vincent DePaul is a good help source.
