How can I prove to my boyfriend I love him? We're both only 15. I write him these long paragraphs of what he means to me, but I want to do something different this time.

I think you shouldn't prove it. He and you will eventually (get to prove?) know that you and him like each other.

Bake brownies or cupcakes and put an edible letter on each one to spell out something short and sweet, like, "You are my cupcake" or "You are a sweetie." In fact, mail them so they are mixed up, and he has to arrange them to figure out the sentence.

Someday you will realize that you don't set about to prove love. Love not only requires time, it requires tests of compassion, forgiveness, compromise, respect, and many times real struggle. If he loses his job, you work 2 for a while. If you have a miscarriage, he takes his vacation time to just stay home and hold you. If his brother and sister in law are killed in a car crash, you take in their kids. You wake up one day years from now and realize that you have 'proven' your love.
That's not to say that sweet expressions aren't romantic and wonderful. I have a box of old love letters and hand made cards. Every few years I take out those cards and laugh and cry. He wasn't a good artist but he sure was creative!
