Out of the fan I have 3 wires 1) white 2) black and 3) black with white stripe and out of the ceiling I have 4 wires 1) black 2) red 3) white & 4) copper. What connects to what

If the black/red/white are the only wires in the ceiling, I assume you have two switches on the wall.

The white from the ceiling and the white of the fan are the neutrals. Connect them together.

The bare (copper) from the ceiling and the bare or green from the fan are the grounds. Connect them together.

The black from the ceiling is from one switch. The red from the ceiling is from the other switch. The black from the fan/light is from the motor. The black with white stripe is from the light fixture. Connect the black to black and the red to black with white stripe.

If the switches are not the same or one of the switches is a fan control switch, and the above is not correct, reverse and connect the black to black with white stripe and the red to black.
