After lighting the pilot, and turning the knob to the on position BEFORE setting the thermostat' dial? Itwill not stays on.
I have Hotpoint water heater model# HG40T01AVG02

How old is the water heater?
If it is new installation then you probably need to bleed air from the line until you smell gas and then try to light the pilot again... should work.
If it is an older water heater with an open combustion chamber then most likely the thermocouple needs to be replaced. If you have an older heater with a closed combustion chamber then check the air intake filters and clean if needed. Here, if makeup air isn't the issue then most likely you need to replace the thermocouple AND the gasket to the combustion chamber door.
