Hi.
I just purchased a dryer (yes second hand) and when it got here we fouynd it it needs gas. Now that should be no issue as it was going next to the stove in the kitchen anyway. My question is can I split the stove connection where it comes out the wall (already has valve on it) by adding a t-connector and then two pipes to the stove and dryer?

I would think so.
I would have somebody able to do this competently, maybe you,? A Gas Leak can be deadly.
They have Gas leak detectors that will inform you of a leak.

It should be okay. You can get a Tee to split the connection. Test for leaks with soap bubbles and you will be fine. Just get all of the right fittings to make a good fit.
