2 Standard 200 amp circuit panels in the wall in my garage. I am running lines to a new Tankless water heater and will need to run them through conduit, but what I am wondering is where and how does the conduit and the sheetrock above the panel(since I will be going up) meet? Am I going to have to tear out all the sheetrock up to the ceiling or can I come out from behind the wall at the circuit panel and run the conduit from there?

If this means:

can I come out from behind the wall at the circuit panel and run the conduit from there?

You want to exit the back of the panel with 90 degree conduit fitting and rise up on the wall surface behind the panel, this is an acceptable method, instead of opening the sheetrock wall and ceiling above the panel.
