Since the gas/Electric range conversion is fairly common if you intend to resell at some point make the shut off accesible or easy to change, other wise what my parents did was to have all the pipes removed to the break.

This eliminates the risk of leaks from unwatched sources.

But who ever put a new range in over a flexible gas hose needs a good talking to.

This is not something that can be done as easily as you just suggested as all plumbing/gas codes require that the gas shutoff be installed BEHIND the stove... no exceptions here!

I will agree, however, that this code is kind of silly, and I have argued against it myself, but it is a code and all plumbers/homeowners need to adhere to the plumbing/gas code, even if we don't always like it, OK?
