Hi, I am listed as borrower/ full owner in a mortgage with ex-girlfriend.. In the mortgage, it clearly states that she and I are both the "Borrower".. and Full Owner is the "Borrower".. I have found that the Deed does not list me as co-owner.. What determines who's names are on the deed?

Did you have an Attorney at closing? Are you looking at the original Deed or an amended Deed?
I have never seen "borrower/full owner" language. Is that what it actually says?
It appears that you are responsible for the mortgage but have no interest in the property. I'm amazed that the bank allowed this - also that your Attorney didn't catch it.

I have not seen any deed, just going by tax/property info available online.. In the mortgage "Definitions" she and I are listed as "Borrower"... Further along they also state that "Full Ownership" is defined as: Borrower is the full and lawful owner of property. This is in the State of Louisiana

Don't go by what you see online. Its possible they are just listing the first name on the deed. Go to the recorder of deeds and request to see a copy of the current deed.
The deed is the governing document here. Won't matter what the mortgage says, it's what the deed says. However, the mortgage lender should have made sure the deed was recorded properly, so there is a good chance it is.

Absolutely agree with Scott - get a "hard copy" of the Deed before you worry any more about this.
And if you are NOT on the Deed I'd be on the phone with my Attorney within seconds.

Agree, You and the other buyer decides who is on the deed and how it is listed. This is something you should have seen and made sure happened when you bought the property.
But you need to go to the court house and check the actual deed on file.
