The book Medieval Holidays and Festivals reads - "the holiday is named after the pagan Goddess of the Dawn and of Spring, Eostre." Coloured eggs were given to her as offerings at the Vernal Equinox (spring).
Church leaders combined some of these pagan celebrations with celebrations of their own (eg Memorial of Jesus death) in order to attract pagans as members.
From reading Exodus 32:1-10 we can see clearly what God thinks of adopting false religious practices and calling it His own. 3,000 Israelite men lost their lives as a consequence.

No, "Easter Monday" is not a term that is meaningful for Christians about Christ's resurrection, except to affirm that it is the first day after Easter.
